This is the basic approach I use. I use those 1-lb box mixes of organic greens labeled Super Greens or Power Greens sautéed with onions and a little garlic instead of straight kale. I find kale too heavy in this recipe. I add feta and sometimes some grated parm. The parchment lining is an absolute must, and remember that it will continue to cook with residual heat once out of the oven, so it’s OK if it looks a little under when you take it out. Tastes great at room temperature.
