Early Fall Tomato Gazpacho

Got out early this morning to walk the dog. I could see from our windows that farmers’ market was all set up so I headed over with the dog and got 10 pounds of nice ripe tomatoes. This is some of the haul.

You can see that I also got some herbs that are in water along with cucumbers and some hot peppers.

Some chopping of tomatoes, cucumber, onion, garlic, jalapeños, cilantro, basil, olive oil, salt and then blending and straining. Took less than 30 minutes all in.

Three quarts along with some basil oil I whipped up using the hand blender. Gazpacho is in the fridge to chill and cure a bit.

Made a little bowl to sample.

Damn near perfect.
