The only people who know the food is outstanding are the people who’ve already eaten there. And they were probably drunk while eating it.

Wow, just wow. That guy punched people in the face, ribs, used a serving fork to poke/stab people under the table. The whole freaking set-up sounds like thuggery….the abuse, violence and the MIL with the apartment. My first reaction was, surprised no one punch that guy back, or tried to kill him? But I get it, they have basically a thug org and you’re stranded in bumfcck Denmark and there’s the industry black-balling mentioned. One guy did stand up and just left, after moving his family there. This Noma guy makes the sh-tbags chefs in the US seem like Mr. Rodgers. And the accounting….Jesus.
The protest shouldn’t be silent. Shame the patrons and the MF owner.
I doubt anything will have any impact as many of the abuse stories are well known for quite some time and they didn’t prohibit Noma residencies in other countries before
And not to excuse any of that behavior but I think it is a general problem in the restaurant industry which happened and happens everywhere. Charlie Trotter for example was also well known for similar behavior but it didn’t really hurt his career
It’s asssult. And he got away with it. There is absolutely no reason worthy enough to condone eating at any of his restaurants if this is the way he treats his staff.
And I’d hazard a guess the majority of diners don’t know about it. Many who eat at fine dining are there for an experience or “to be seen” without really knowing or caring what went into the creation of their meal, including background stories such as abuse.
And isn’t that too bad.
At least everywhere modeled after the French brigade system established by Escoffier, or propagated by anyone trained in that system as a model.
It’s quite widespread across Europe and the US – high profile NYC chefs, Barbara Lynch in Boston, and every other city with not just restaurants aspiring to fine dining, but also regular places with someone at the top who came through an abusive system and then modeled it forward.
I think it is a misconception that this is only happening in fine dining kitchens. There are many stories of such behavior happening in many non-fine dining restaurants, bakeries etc. I know you like for example Dali in Cambridge but you actually don’t know what kind of behavior they have on their kitchen - so I don’t think it is really fair to say that people who eat in fine dining restaurants don’t care what is happening in the kitchen. It is nearly impossible to find out if you don’t know people insight the kitchen
Here is just one example of a person describing abuse/bad behavior ranging from doughnut chain kitchen to Michelin star ones
People need to get out more if this “news” about Noma is actually considered news.
By the way, did anyone know that George Washington was a slave owner?
