What brands of instant dashi powder do you like, I’m wanting more miso soup in my life. A couple of times I’ve tried to make it with some kombu and bonito flakes and it has been very fishy tasting and unpleasant. Totally unlike my experience with miso soup at almost any Japanese restaurant.
I use this stuff. Since I only use it to augment a fish chowder (or perhaps a dipping sauce for Asian dishes), I can’t testify as to whether it suits your purposes.
I’ve used Aji no Moto hondashi granules for years, possibly decades. I buy it in a 2kg box at the local Asian megamart. It’s not quite as good as made from scratch, but far easier.
TIL that powdered dashi exists - I’ve only ever bought the paste tubs. Or made it and had it end up too fishy like you said.
I’ve never seen dashi in paste form. Are you sure you’re not talking about miso?

If you’re just looking to make miso soup, this is what I used in Japan and absolutely loved it…liquid miso (with or without added bonito “dashi”). First with:

It sounds like you don’t like Dashi, or that your Dashi is too strong, or that the bonito has oxidized. Given that it Dashi is made from dried seaweed and fermented, dried smoked tuna, it’s not a surprise that it is fishy. If it tastes bad, one suspects the ingredients, the preparation, or your palate. If you think your ingredients are okay, and you followed the instructions not to boil the Dashi, then don’t worry about it, use a vegetable or chicken stock.
What an odd response, given I already said I liked dashi but didn’t like my result when trying to make it. And was asking for a recommendation on a different ingredient to try again. It’s quite a leap then to tell me I don’t actually like what I said I did, and suggest I go with broth instead.
