Creamy pesto?

Hi!
I made turkey ricotta meatballs last night and am going to serve them tonight. I saw a creamy pesto sauce on a restaurant menu and it got me thinking if I could do something similar. I have amazing prepared pesto. Would I just add cream? Anyone have any recipes they’ve tried?

Heavy cream or crème fraîche should do the trick. You could also use mascarpone.

I’ve mixed cream cheese with spinach for a pierogi filling and it was GREAT!!

I’m wondering if you could mix warm cream cheese & pesto and thin it with some nice olive oil?? Maybe even whip it a bit with a hand mixer?? Sounds really tasty over top some angel hair!

Now I want to make this…

Thanks for the link! This looks sooooo good! I was already on track to increase our garden basil plantings this year so I could stock the freezer with tomato basil soup. Looks like I’ll have to plant even MOAR to make extra pesto for this sauce. :yum: :herb:

I was worried it would dilute the pesto but it really just enhanced it. It went amazingly with the turkey ricotta meatballs - I am really picky about ground turkey recipes and the pesto sauce masked any flavor of the ground turkey, which is a necessity for me when cooking with it, lol. I’m going to use the leftover sauce with pasta. I used heavy cream but I think light would work better.

Good tips - thanks. I’m thinking chicken-zucchini meatballs in creamy pesto sauce, over pasta. Well, pasta for me and noodz for DH. :rofl:
