Cook’s Country Fajita marinade recipe

We tried many fajita marinades over the years but nothing ever came close to the taste of them at a Mexican restaurant. Then we discovered already marinated beef fajita meat at our Mexican meat market and were happy. But tonight CC talked about a fajita recipe reminiscent of Ninfa’s in Houston.

1/4 c. soy sauce
3 crushed garlic cloves
1/2 c. Vegetable oil
3/4 c. pineapple juice

Is this not Teriyaki sauce or what?

Never seen such a fajita marinade. The pineapple juice is probably for tenderising the meat. With that amount the meat will likely have a taste of pineapple. Nice for marinating white meat, too.

Most common ingredients in a fajita mariade I have seen are cumin, paprika, garlic & onion powder.

Yup, teriyaki. I am a big fan of Mr. Yoshida’s Original Gourmet Teriyaki Sauce and Marinade. Sold in pottles (I am trying to revive this archaic term for half gallon) at Costco, and smaller bottles in some supermarkets and online.
