This 25-year-old book (now out of print) is pretty much the standard work on making xiao long bao and sheng jian bao at home,with detailed instructions for every step. It also includes instructions for shui jing bao, Huaiyang tang bao (the giant size soup dumpling) and even traditional accompanying soups. I was hoping to find a shareable PDF version (and was scared off of several sites by malware warnings) but managed to find a full html version.
