One of Sunshine’s favorite meals is Chicken Parmesan. I made it many years ago for one of her birthday meals.

Because it was my first time making it or maybe the pressure I put on myself (because it was Sunshine’s birthday and I didn’t want to mess it up); I found the dish to be very difficult to make and quite time consuming. I haven’t made it since.

I should try, again…

Looks good. I’m looking forward to making boeuf Bourguignon when the weather finally cools off. That, and a proper beef Wellington, pork pies, classic steamed puddings of all sorts and the list goes on. Though I’m not fond of the cold, the kitchen sure does smell good in the chilly months.
