A mini taco crawl for me in the neighborhood, here and then Beto’s.
I had trouble deciding on two, but ultimately went with Chamorro (shank) and Cachete (cheek), then was tempted Costilla (rib) for an unplanned third. Almost added Barriga (belly) and Nana (uterus, which I though might be similar in texture to Indian Khiri / udder), but then reminded myself I was also going to Beto’s and held back.
All three were excellent. Cheek & shank are probably tied for me, with rib being only a hair behind. My issue was more one of “sameness” – once you add toppings and salsa, you probably couldn’t tell them apart (the guy at the counter took a minute when I asked him which was which, and I’m not sure he switched rib & shank tbh). I’ll have to go back to try the nana to satisfy my curiosity.
