I NEED the calories as I’m only a shadow of my old self because of illness, so I will make it at some point. I will have to “fudge” one of my soufflé recipes.
I think I have Commanders’ cook book, I will look and dm you the recipe. And you can decide how you might want to adapt it, maybe make it with more calories!!

I gave a quick look at some of the recipes purporting to be Commander’s, but none are the same. The more accurate pictures are the ones pictured from TikTok. Check your DM.
I’m not the biggest fan of bread pudding but I have been seeing videos for blender bread puddings on social media lately that have me intrigued - I think I may like the texture more that way. https://www.easyanddelish.com/easy-bread-pudding/
For anyone interested in making this, the type of bread is very important. They use Leidenheimer’s bread which is a very thin crusted , golden loaf whose crumb is much different than a baguette. It’s extremely light, relatively fine crumb and bears no resemblance to what most people would consider a French baguette.

There’s a newer book, written by Ella Brennan or Duck Brennan’s granddaughter which might have a different version of the recipe. This was 1984 version. My copy was signed by the sous chef and Dick Brennan as one time we had eaten in the kitchen at the Chef’s Table.
