Boiled Peanuts with Soy Sauce

I’ve boiled raw peanuts a few times before … this time I’m trying Edward Lee’s recipe in Smoke & Pickles. Just water, salt, soy sauce, bring to a boil, simmer 4-6 hours. When done, he says to drain and refrigerate, will keep for one week. If I don’t finish them, is it possible to freeze them in the shell?

I got these at the farmers market today, maybe I bought too much, 2.5 lbs.

I don’t drain mine so they last longer than a week

I can’t even taste the soy sauce so next time I’ll put double. Farmers market charged $6 lb, a local market is only charging $3 lb.
