I’ve boiled raw peanuts a few times before … this time I’m trying Edward Lee’s recipe in Smoke & Pickles. Just water, salt, soy sauce, bring to a boil, simmer 4-6 hours. When done, he says to drain and refrigerate, will keep for one week. If I don’t finish them, is it possible to freeze them in the shell?
