Some time ago, I wanted to create a spice blend very much like the classic Old Bay, but with less salt. It took a while and a lot of ingredients. Fortunately the spice inventory here is really good. All the spices were powdered, either in a mortar & pestle or purchased as powders. Don’t try to powder your own mace; it’s pretty gummy. I don’t know if it’s ground after deep freezing, or how it’s done.
Initially, the flavors are not as close to the brand name, but get very similar after some days, at room temperature, in a tightly-sealed glass jar.
1 tsp. + 3⁄4 tsp Celery Salt
1 TBS + 1⁄2 tsp Celery Seed
4 tsp Sweet Paprika
1 tsp Dry Mustard (like Coleman’s)
1 tsp dry powdered Ginger
7 medium Bay leaves, ground, sifted
1⁄2 tsp Smoked Paprika
1⁄2 tsp Black Pepper
1⁄2 tsp White Pepper
1⁄2 tsp Cayenne powder
1⁄8 tsp each: Nutmeg, Mace, Cardamon, Allspice 1/16 tsp Cinnamon
1/16 tsp Ground Cloves
1⁄2 tsp Amchur (Green Mango) powder
Mix well and allow to stand for some days for the flavors to meld and balance.
