Best Uses for Leftover Turkey

Oops, forgot to mention turkey a la king over rice or toast points. I prefer to make it starting with diced uncooked skinless turkey breast because it flavors the sauce as it cooks more than already-roasted turkey does, but Thanksgiving leftovers will suffice…Sliced mushrooms go into the sauce as it cooks. Since peas don’t need much cooking, I stir frozen ones into the finished batch. Wait a few minutes before serving. Peas should still be fairly green, and will lower the temp of the dish enough that it’s almost cool enough to eat right away.

Thanks for this tip. We have a lot of homemade turkey stock in the freezer from our Thanksgiving bird. I have been wanting to make French onion soup and will try this!!
