Jay Hieng Fishball Noodles is one of the more established kuay tiew luk chin pla (fishball noodles) spots in Talad Noi.
Talad Noi itself is an interesting neighborhood - an erstwhile quiet corner of Bangkok Chinatown (bordering on Charoen Krung) which has begun attracting street art enthusiasts ever since the 2016 Bukruk Urban Arts Festival, when international mural artists like Roa of Belgium, Spain’s Aryz and Romania’s Aitch converged on the area, transforming dilapidated walls of the derelict shophouses into giant, colorful mural art pieces.
Jay Hieng Fishball Noodles is as traditional as they come, family-run and offering one of the Taechiu-Chinese’ favorite noodle dishes: ba mee crinkly, fine egg noodles accompanied by various fishpaste-based garnishes: luk chi pla (little spheres of bouncy fish forcemeat), kiew pla (wantan-like dumplings with fishmeat-infused dough wrappers enclosing minced fish-meat filling) and hieu guay (slivers of twice-cooked fish-cake).
One can opt to have the noodles in a clear fish broth or nahm:
Or opt to have it “dry” or hang, i.e. have the noodles tossed in a fish sauce-soy sauce-garlic oil dressing.
Besides the yellow egg noodles/ba mee, one can also choose rice vermicelli/sen mee. For the dry version, some customers liked it with a dash of vinegar provided on the table.
One of the more interesting side-dishes: shredded taro wrapped in bean-curd skin into long, cylindrical batons, steamed, then cut into 3-inch-long quenelles and deep-fried.
