I have no patience for baking (thatâs my BFâs job), which is why this no-yeast, no-knead soda bread from Jacques Pepin is so perfect. The quickest thing Iâve ever baked. As shown in his video from a few days ago, I was literally done with the dough before the oven finished heating. Tastes great too. Very crusty!
My wife has been doing the sourdough thing recently. Seems to be âthe thingâ these days. Canât complain, fresh Baked bread is a wonderful thing
Bread baking is indeed the thing at least in France now. Empty shelves of flour and yeast in shops is rather frequent. The demand of Du Buyer bake moulds are 3 times its normal sales and always are sold out. I think itâs recomforting to bake bread (and cakes) in lockdown.
My wife made the KAF sourdough beer bread yesterday, using Negra Modelo and diastatic malt rather than malt flakes. Very tender crumb and a hint of sweetness, thanks to the malt and honey.

Sure! Itâs a lime tart, but Iâve used lemon and it is as good.
My pie is 26 cm (10 inch) and I double the recipe of lime cream. For the pastry the portion suggested in the recipe, I can make 2 pies.
First breads from my Flour, Water, Salt, Yeast book. I donât have 2 dutch ovens so tossed the second loaf into the fridge and baked it the next morning. Much tighter crumb on the second loaf. Lots of room for improvement. This dough is quite wet and I need to get a better method together to simulate proofing baskets. The real ones seem to be sold out all over the place and Iâve had mixed results using a floured towel in a bowl method.

I made this tiramisu, posted on Yann Couvreurâs Instagram story during covid lockdown. Itâs his Venetian grandmotherâs recipe, in fact itâs a tiramisu soufflĂ©.
The taste was really good, unfortunately the cream was liquid. I donât know what went wrong, maybe the beaten egg white fell apart.
Made two small focaccie for my neighbors, who have been taking turns mowing our hell strip. This is DHâs job, but he hates doing it so typically lets it go a bit longer than he probably should. Our neighbors are bored so they keep doing it before he gets around to it, which does not upset him at all. They were both pleased to get fresh bread, but I wish I had made another for us! Oh well, plenty of time on my hands to do so later this weekâŠ

Tyou @Saregama. My MIL had some respiratory complications since she is a smoker. Right now she is in therapy 3xs a wk but no longer hospitalized. She was lucky with aggressive treatment.
Bread baking def relaxes me plus its great for my dexterity and Keeping limber hands. My fav loaf was an olive onion filling but I made a small round and it was gone way to fast for the time invested.
