Getting my spouse a noodle maker for Christmas, type that does everything including kneading the dough. It’ll be for Asian noodles (possibly, but not necessarily including wonton skins), not “pasta.” Any experience with these (brands, best flour, etc.)?
I am assuming you are talking about an extruder. I have had one for decades, but haven’t used it in years after getting a pasta roller.
The reason why… dough made in the extruder has to be way drier than what can be rolled out. IMHO, that makes the texture of the noodle pretty rough.
I get that the extruder is much less work, but the results are noticeably poorer (and less flexible) than rolling/cutting by hand/pasta roller.
Obviously if you want shapes that can only be extruded your stuck with an extruder, but it is super rare that I need any of that.

The Philips pasta maker is basically this. All the instructions that came with it were for asian noodles.
