Anyone have ideas for high school baking club projects?

Tj Maxx, Home Goods, and Marshalls have plenty of good basics for very inexpensive prices.

I’m sure they’d enjoy a step-up from the cupcake / cookie decorating version, though that can also be a lot of fun.

The stipend being pay for my time as advisor. They don’t give anything for supplies which is why I’ll have to look into fundraising.

Here’s an idea: Have the class make 2 kinds of Chocolate Chip Cookies, one soft & chewy the other crispy. (My daughter likes chewy, I prefer crispy!)

Have the kids take a vote after tasting. Then see which one sells out faster.

The only problem is cookie dough is better if refrigerated a while first.

Maybe a comparison unit of brownies (fudgy, iced, blondies, etc) one type a week over a month’s time? Next unit, quick breads? Another month of different holiday cookies? Another baking unit on savories (herbed biscuits or rolls)? The possibilites are endless! I’d love to do something like this. Can thrift shop aquired equipment be used?

Sounds like a very fun class; one they’d look forward to instead of horrible subjects like Beowulf and having to memorize lists.

A lot of my suggestions are scattered throughout this thread - but another thought came to mind.

I’d flip through the book “Secrets Baking Simple Techniques Sophisticated Desserts Sherry Yard”. (buy - its a great book or check out from Library). Sherry was the pastry chef at Spago, super nice woman, and still does some TV stuff I think (among other things). But - this book has some great recipes but it is also organized in a way that might give you some ideas for your baking club.

Each chapter is centered around a fundamental baking technique - e.g. Ganache or caramel or pound cake (can’t remember them all) - and then there are several recipes that all use that same technique or slight variations of that technique.

For example - the Ganache chapter talks about how to make ganache and then has “soft”, “medium”, and “firm” ganache recipes. E.g. Chocolate frosting vs truffles vs chocolate sauce.

It may give you some ideas for structure and recipes!!!

It isn’t a class. It is an after-school club. I teach science during the regular school day.

Sounds like great fun. I first learned a few recipes in girls scouts.

We shall see. I would like to do more than just decorating contests. The whole idea is overwhelming me though. I never should have answered that call. haha

Check out Sherry Yards book. I think the structure alone would be great for a club and take some pressure off.

Even though it’s summer vacation, with all your contacts/networking at the school, surely you can find out from someone there how many kids signed up last year. That will at least give you some idea of what to expect. I mean are we talking 20 kids or heaven forbid 50 or 75.

You’ll do great!! And the kids will be very appreciative.

They will need these “cooking/baking” skills as they transition to the next phase of life. They won’t be stuck placing a DoorDash order!!
