Someone I know strictly from online mentioned having a pina colada muffin as a snack. That definitely pinged my radar because I love all things tropical–especially coconut and pineapple. A search on EatYourBooks returned nothing. I couldn’t even find a good variation in How To Bake Everything or Bravetart.
Any thoughts?

Just google pina colada muffins, there are dozens of recipes.
This one from a cook I trusted back in 2006 (name not noted nor recalled)
Pina Colada Muffins
1/2 cup sugar
1/4 cup margarine (I used butter)
1 egg
1 cup sour cream
1 tsp. rum extract (optional)
1 1/2 cup flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 small (8 oz) can drained crushed pineapple
1/2 cup coconut
Preheat oven. Grease muffin tins. Drain the crushed pineapple.
In a small bowl, beat together margarine and sugar until creamed. Add egg. Stir in sour cream and rum extract.
In a medium bowl, mix flour, baking powder, baking soda and salt. Stir in sugar/egg/sour cream mixture (moist ingredients) until just mixed. Fold in pineapple and coconut.
Fill greased muffin cups half full. Bake at 375 degrees F., 20 minutes. Makes 12 muffins.

My search at EYB for pineapple coconut muffins recipes in the Library tab popped up a couple dozen. Maybe the tilde (or missed tilde) for the “n” in pina made searching for that tough?

yeah nothing came up on EYB but I also called them pina colada muffins rather than “pineapple coconut”. My bad.
