Jr Iā€™m a bean guy too. Some people I suppose are traditionalists, but I think beans are good in chili.

For people trying to cut down on meat/red meat, beans (and soy proteinā€“heresy!) are pretty much important ingredients. Frankly, my favorite chili is the Green Chicken Chili that I make, with tomatillos, green peppers, jalapenos, canellini beans, and no tomatoes. I think green chilis are sadly neglected around here.

Yum that sounds good Evelyn! Chili is kind of like pizza or a burger; even if it isnā€™t great it is still pretty good :smile: lol

I only really cook beef chili but I will gladly eat other styles.

I messed around with some sausage blends in the last few years but never nailed it. I had some winners but beef rules.

Do you folks have any good green chili recipes?
