I really like a Bacon Avocado Tomato, Bacon Arugula Tomato, Bacon Basil Tomato variations.

Also, fried green tomato blt, and pancetta BLT.

Also, bacon, shredded lettuce and mayo-stuffed cherry tomatoes.

Why stop there? Presenting the Bender Schmender, from the gone-but-not-forgotten Roy’s Place in Gaithersburg. I only saw it served once. The entire kitchen came out in a conga line. I believe there was also a drum involved …

I saw that method a few years ago in one of the food mags and tried it. Too much bacon for me, I’m sure someones out there do it.

A now gone place in Austin, Slake, had a superb BLT of bacon, arugula, tomato, chipotle mayonnaise, and onion jam on a lightly toasted brioche bun. I miss it.
