I agree about the frozen tortilla. I lived in Spain for two years and decades later I still struggle to make one as good as I enjoyed there frequently. Even with my flip tortilla pan. The TJs version for me is very, very sad.
I suspect that microwave would have resulted in even worse texture.
Sounds like the microwave is in fact the way to go, based on our sample size of two. Other than too much potato and the thing absolutely dying for salt, it was texturally pretty decent. Sliced very nicely, was tender except for a little bit of crustiness around the edges. ![]()
I like to sprinkle the top with some flaked /grated cheddar for a little color though not traditional. I micro it at 80% power, soft and tender, makes for a quick breakfast with toast.
ETA…I let the mixture sit for 5 minutes or so to soften the chips prior to microwaving.
There was an older ding to the tortilla that I forgot about it when I bought it, but found when I came to add my review, but I can’t locate it.
Anyway, more likely that everyone has a different preference / tolerance for what’s being sold vs their ideal version of the dish.
Tortilla Espanola isn’t difficult to make. I think I finally mastered it, although not the traditional process. I used pre-cooked potatoes given the price of good olive oil. I take the pre-cooked potatoes, slice and sauté with onions started a few minutes ahead. I use about a 1/4 cup of olive oil, get onions translucent and the potatoes warmed up and soaked in oo, add some smoked paprika. Then I add to the egg mix, which is salted and some added fish sauce for umami. I then fry it for 5 minutes, and put in the toaster oven for 15, take it out, fry the other side. Here’s what it looks like.

I know they’re not new, but I just want to give a shout out to TJs Organic Blue Corn Tortilla Chips.
They’re NOT paper thin, they’re NOT flimsy, and they do NOT break while scooping up some salsa. ![]()

Having recently “discovered” morning buns from Orwasher’s, I was excited to see TJ’S now has a bake at home version. Morning buns are basically a rolled croissant dough with cinnamon sugar and often some citrus zest. On the TJ’S bun despite using croissant dough that has a crisp, the rest of the croissant dough compresses like cotton candy as you bite into it, at least when still slightly warm, and who’s going to wait?. The cinnamon/zest melts down and acts more like an icing (turn it over before removing the paper cup that you bake it in. It’s not so much a morning bun as an orange flavoured sticky bun. For me , at least, I’m going to stick (no pun intended) to Orwasher’s, despite a large $ difference.
