Huh. I’m not exactly SURPRISED that there’s an American Cheese Society, or that people who make, sell, or otherwise are involved in cheese professionally would have a conference. I can see its utility. State of the industry, discuss any regulations that are in the offing, swap methods for getting a better product, etc.
But I find the phrases “the cheese community” and “cheese enthusiasts” kind of hilarious…
That said, I’d love to sit in on the Affinage course, just for my own curiosity.
