And, as ever, it’s another one where it’s, erm, in the eye of the beholder.

There are dishes there that I have absolutely no interest in making - not least because I can easily buy an acceptable product at the supermarket. Pasta, for example.

Then there’s the dishes that didnt make the list that are, in this house, pretty much essential cooking - like a good stew or casserole.

Same here, as well as the pasta, mayonnaise, and (for us) the red meat dishes. Now, chili (both red and green, using soy protein instead of meat) is an essential in our house. YMMV.

I have absolutely no idea. Never having made it at home I have nothing to compare it against. What I wrote is that I can buy an “acceptable” product.

Sushi rice? I thought the Japanese apprentice need 5 years to learn from a sushi master: first few years just to learn to cook rice, and after 3 years one is allowed to touch the fish.

Don’t make French fries at home. No mayonnaise and black bean dip as well.

While I’ve been cooking for a lot longer that the author and associated chefs have been alive, there are many foods/dishes I’ve never cooked, have no idea how to cook, but should the yen arise, I can get help from Mr. Google and muddle my way to a presentable dish.

If I was trying to make a list of “only essentials”, I might be persuaded to include only one or the other of those, but “both” seems better to me, and “neither” wouldn’t suit me very well.
