I just finished making turkey stock in a staub cocotte I picked
up at the warehouse sale several years ago
not sure why I never did this before
It has been on the stove for 8 hours over the
teeniest flame… covered the entire time there was no
reduction … it has produced the most intensely flavored stock I have ever
made …yay
