Your preferred pan to sear steaks in and then deglaze for a wine reduction sauce afterwards ?

I’ve tried using different types of handle gloves for my Matfer and Darto carbon steel pans and bought a couple from De Buyer that works pretty well (I actually bought these two for my De Buyer Mineral B Pro pans, but the SS handle stays pretty cool during frying/searing), but I soon found out that when I sear steaks the De Buyer gloves will get totally filled with oil splatter.

So here I’ve tried different solutions, and even though aluminum foil is heat conductive, some how the handle stays pretty cool during the searing process and as soon as I’m done with the high heat sear part I’ll remove the foil and have a clean handle.

I’m not a chemist , so I can’t say why heat conductive alu foil works and keep the handle pretty cool, maybe it’s because I don’t wrap it tighly around the handle, but it works for me on my Darto’s.

Ah. You were trying to protect the handle gloves/sleeve. This way you can toss the aluminum foil after cooking.

At first I kept the handle glove on and then placed the alu foil around the glove, but I then found out the foil did enough of heat protection, so I don’t even need to use the glove now - the foil alone wil add enough heat protection.
