Your favourite kitchen knives ?

I know you just got a terrific bread knife. Congratulations. My Au Sabot bread knife from Flotsam and Fork does a nice job with biscotti. It has large and deep indentations and a very sharp OOTB edge. It’s only drawback is that it has a blade that is about eight inches, and I was used to ten. The cutting ability more than compensates for the lack of a longer blade. So file that away for years down the road should it come time for a new bread knife!
