This is big-time business here in Maine. Last year I saw lots of activity by flashlight in the wee small hours in the small creek across the street from me for a week or so, likely poachers but maybe not.

I have not seen elvers prepared or served. I think they get top prices by exporting them to Japan. But there is a business called American Unagi that raises them via aquaculture somewhere in Maine. I have had their smoked unagi (sold frozen) and it’s delicious.
