Generally, the kitchen cooks the risotto about three quarters of the way, pour it onto a sheet tray and allow it to cool completely. When you get an order, add a portion of the risotto base to a pan with a ladle of stock, bring it to a boil and allow the rice to absorb the stock. Then add butter, cheese, and your garnish of choice.
I like my polenta a little less al dente . More creamy .
This leads to polenta talk . Spoonable and creamy . I slowly cook it stovetop . Around 50 minutes .
Not so much into the stand up thick .

We have risotto and salad for dinner frequently. The one we eat most is leek and mushroom, but they are all wonderful. This addiction ensures an always present need to make stock. Yesterday we had a small amount of leftover leek and mushroom risotto and a small amount of split pea soup. We mixed them, and that was delicious, too.
I have blue cheese and pistachios and arborio rice, so I might make something similar in the next couple of days. I’m not inclined to slavishly follow the recipe, though, even if the recipe insists upon it.

Joe H. was very opinionated, and very insistent on his own way or his words being the only way or words that were correct. But citing distaste for those who don’t accept dissenting opinions was like he didn’t have any mirrors to see exactly what he was decrying.
Every accusation is an admission, as a bunch of people have said about a very different thing.
I like contrary views. They keep me on my toes and help me make adjustments.
