Mrs. P made a duck leg confit salad with D’Artagnan duck leg confit, arugula, fried shallots, toasted pecans and walnuts, strawberries, blueberries, cherry tomatoes, blue cheese, topped with reduced balsamic and mustard dressing. I also snacked on the crispy duck skin. It all went great with an excellent red blend.
Baking it helped, I think. It went in to the toaster oven in a shallow pan lightly greased with olive oil, and that’s it. So no flipping on a grill or a skillet.
No sticking either, clearly!
Back from a 5-day road trip with zero interest in cooking tonight. WFD is Hebrew Nationals on store-bought buns. Along side, a garden slaw (cabbage, carrots, scallions) with a dressing from Love & Lemons : mayo, cider vinegar, Dijon, maple syrup, and celery seeds. Good stuff.
Grilled cilantro chicken, grilled cheeseburger sliders, tomato-cucumber salad, French bean and potato salad with pink-eyed peas. (Shallots instead of garlic, red potatoes, red wine vinegar for white.) Very fun playdate/dinner with several friends. Lots of wine.
We went to The Royal Tyrell Museum today. It’s a palaeontology museum a couple hours away. I have been there lots but it’s been a solid 15 years. Alberta has the most diverse dinosaur fossil program in the world. Never knew that. We got to see the Borealopelta that was found at Suncor which was found in my hometown by a company we are three generation family employees at. The drive was cool too! Canola fields to badlands within a couple miles. After we left we stopped at a bar on the side of the road. It’s been open since 1933. Today was there last day before a B and B takes over. Random timing, and we bought some bar stuff from them as everything was on sale. They didn’t have food so we stopped for some mozzarella sticks on the way out of town. Heading to the airport to fly to Kelowna now to check on my FIL after a surgery. Then my honey asked if we can drive down to Seattle tomorrow because he’s craving The Crab Pot. Added some extra pics because cool stuff

Me! I just realized that I am not Roy. He was our senior dog we rescued and were blessed with 15 months with. I just keep him with me every way possible. The hay fields were maybe 5 minutes from badlands. Such a cool juxtaposition

Foggy and chilly today, I needed soup. Carrots, celery, onion, garlic, sauteed in oo, added a big helping of garlic and herb seasoning, bay leaf, chicken broth and cheddar sausage that had been browned in the oven. Added the cannellini beans and spinach just before serving. Warm baguette and butter.

I found a recipe for a Mexican enchiladas suizas which is quite distinct from the type I’m used to.

Black cod sauteed in duck fat. Everything that you sautee is better in duck fat. With a brown rice, romano bean, and asparagus pilaf.
Sent BF a recipe for a Korean ground chicken bowl because we had everything but the cabbage for it, and he read my mind and cut the honey, used brown sugar instead, but less than called for of the honey. Really delish - nice and peppery.
