What's For Dinner #120 - the Grilling Edition - July 2025

100* again and no breeze but he was in the mood to cook out cheeseburgers and who was I to argue. I made my favorite franks and beans and Lay’s chips on the side.

Dinner at Ketch Grill & Taps across from our hotel, mostly for the view, but the food is good too. We started with the pretzel and beer cheese and then I got the mahi mahi in tacos (BF got it in a sandwich).

Omg! I am certain I would freak out!

Local fishmonger sets up a temporary outdoor food stand when there are big events in town, so I picked up a couple of $5 fish sandwiches and this lovely bowl of their house-made cream of crab soup.

Then i investigated the cantaloupe that came in my csa yesterday. We wee firmly instructed to take them home and cut them up IMMEDIATELY because all the rain was making them rot from the outside in.

So we did so, and then I let the cut melon chill for a day and a half. Tonight when I opened the fridge, the whole fridge smelled lusciously of melon, and it tasted perfect. We eat a melon a week or more when they are in season, and this one (only our second of the year) is gonna be hard to beat.

My dearest dear is on a bit of a summer vacation starting today. I don’t work if it isn’t the NHL season. We went for a couple PBR and some VLT time. Shared 10 honey hot and 10 dill pickle wings at our favourite dive bar where wings are still 40 cents each. He was still hungry when we got home so we ordered pizza. His was some monstrosity with pineapple. I just wanted cheese. We have a couple inter-provincial adventures planned for his time off, nothing crazy yet. But I’m a wildcard :woman_shrugging:

I had mushrooms that desperately needed using and a wedge of taleggio so I made pappardelle with mushrooms and taleggio loosely based on the recipe below. Panzanella. A little wine.

Tonight’s dinner was Sausage Meatloaf, mashed potatoes and peas. Nothing real exciting… just a hot filling meal.

Our dear friend and hostess of the mostest down in FL makes a mean taleggio & sautéed mushroom toast as a snack/appetizer.

If you haven’t tried it, I bet you’d love it, too!

Last week was National Hot Dog Day, and while I didn’t celebrate :wink: I WAS thinking “Hmmm, I haven’t had a hot dog in a long time. Would I want a dog on a bun with mustard, and maybe make some sides? Oh wait - I haven’t had franks and beans in a LONG time!”

I’m thinking I’ll put hot dogs on the shopping list and will either buy a can of B&M baked beans OR make my own very soon. Problem is? I want it NOW. :smiley:

Oops - you’re right. I saw “third Wednesday in July” in a quick search, and glanced at the calendar on my wall at work and thought “Yeah, that’s today.” Fixed my post.

Truth. I’m looking forward to taking off on the 31st and 1st for a long weekend. Hoping that nothing happens to prevent me from taking time off.

Agreed. Enchilada = in Chili(sauce)
I am not sure if you are referring to “Enchiladas Suizas” but it is a Mexican Dish with hazy/contested background. No “Swiss” Cheese in it, Basically Chicken Enchiladas with a Green Sauce enriched with Crema and Chihuahua or Oaxaca Cheese

Looks so darned good. Can you point me to where I can find the recipe for that wonderful looking green cilantro sauce, please?

I didn’t really use one, but there are a few floating around if you google nam jim or nam jim jaew.

I used up an entire bunch of cilantro, one big garlic clove, the juice of two limes, very thinly sliced lemongrass & lime leaves, about 3 tbsps of fish sauce (Red Boat), a pinch of toasted sugar (in lieu of palm sugar) and 5 Thai bird peppers. Of course, you can adjust tartness, saltiness & heat level to your own preference. Some add dried chili peppers instead, some use shallots, some add toasted rice powder.

Mine is pretty basic and just delightful with grilled fish or meats. It’s downright fantastic with fried pork belly :drooling_face:

I made pad Thai with brown rice noodles, pressed tofu, and foraged chicken of the wood mushrooms. Side of Thai long bean stir fry. Both were good but I think pad Thai is best made in a restaurant where there are no substitutions.

Tried out a new one pot Italian sausage/gnocchi recipe mainly because I had all the ingredients on hand. Sautéed the sausage/chopped onion. Then garlic and white wine. Next went in diced tomatoes w/juice, 1/2 & 1/2 along with the gnocchi. Since I was heading into uncharted territory with uncooked vacuum packed gnocchi I actually measured all the liquids. Finished off with grated parm and fresh basil… Rich but pretty darn good. Just some crusty Italian bread for me and a salad for him.
