I’m of the opinion that almost any sammich bread is better toasted
Fishing Monday.
This week, I have been leaning on locally made items and CSA vegetables to get a meal on the table after long, hot days removing invasive bittersweet from our yard.
First up is crabcake pierogi with a side of steamed broccoli. (Polish Prince Pierogi in Billerica, MA makes delicious little pillows of happiness with both traditional and non-traditional fillings.)
Second is the summer’s first corn alongside roasted zucchini, and smoky beef brisket that hits all the right brisket-y notes. A splash of vinegary sauce in the North Carolina style was a tasty pairing. (Brisket and sauce sourced from a seasonal favorite of our household’s, Hubba’s Real Pit BBQ in Westford, MA.)
Some nights we’ve just been foraging from the fridge but nobody needs to see that. Getting back out there to pull and dig up more bittersweet today.

That pierogi maker is doing fun and tasty preparations that don’t sound like they’d work, but they do. He uses his grandmother’s dough recipe—flawless—with new fillings that he keeps devising.
i’ve never had a panuzzo, but that combo makes one of my favorite sandwiches of all time. did you make the panuzzo or did you find it somewhere? looks amazing.

for me, any crispy lettuce with do, but there must be lettuce.
More of the same. My turn at making the Woks of Life poached chicken with ginger/scallion sauce at my sister’s. Made it a bit saucier than the BF’s, shown here before plating over rice. i could eat this every night.
Thanks, I made it! Basically pizza dough formed into a loaf like shape.
Saucier is always the right answer, I say. Looks delightful.
This past week I was at a historic reenactment held in Wyoming, so 3 meals a day were cooked over a fire.
Absolutely no idea why, but I couldnt access HO the whole time I was gone (could view literally any other site from my cot) so couldnt have posted the meals even if Id dared to have my phone out.
(Yes, this is the 18th century primitive camping I’ve described elsewhere … but at 7500 feet of altitude an equally breathtaking scenery)

Steamed whole Floridian Rose Red Grouper with julienne scallions, ginger, seasoned top soy and finished off with sizzling oil.

Razor clams in the shell cooked with EVOO, minced Anchovies, Garlic, Parsley, White Wine and Butter.
Umami and freshness of both dishes were out of this world!
I absolutely adore razor clams. Grilled, steamed, tinned… delicious.
Thai style red curry with haddock and broccoli. I used about 3 tablespoons of Mae Ploy and augmented with extra garlic, ginger, fresh turmeric, shallots, coriander stems, and lime leaves.
We picked up a few things at Sam’s and Aldi today for the backyard potluck we’re hosting tomorrow night, and I swear I spent the rest of the afternoon in the kitchen preparing stuff: a bright, lemony potato salad for tomorrow, toasting rice & grinding it up, chopping herbs, lemongrass, Thai bird peppers, garlic, etc. etc. for our Thai Sunday Tradition.
I made turkey laab following a friend’s recipe minus the sesame slaw, but it’s a really great recipe even without the slaw. She includes lime zest, but not lime leaves — I added both for good measure. My boo made jasmine rice, and I used up the last 4 Persian cukes in a smashed cuke salad based on this WoL recipe, so…. a Thai/Sichuan Sunday, I suppose. Tradition, shmadition
The best news today, however? A mutual friend of @wabisabi and me struck gold foraging chanterelles today, and offered me a bag <3
Looks like we’ll be having chanterelle pasta on Tuesday

Packet potatoes (sliced and buttered and cooked on the grill)
Kale salad
Watermelon feta salad
And for dessert, a family friend gifted us two slices of her homemade strawberry cheesecake pie.
Picked up some BISO chicken thighs at Hannaford last weekend, and used 3 of them tonight for kebabs
Removed the skin and bones, cut them into large pieces, and marinated them for about 5 hours in a whisked blend of:
1/2 cup 2% Fage Greek yogurt
1 - 1-1/2 Tbsp extra-virgin olive oil
1 - 1-1/2 Tbsp freshly squeezed lime juice (I kind of drizzled more in after the first 1 Tbsp)
2 tsp minced garlic
1 tsp sweet paprika
1 tsp freshly ground black pepper
1/4 tsp ground cumin
1/4 tsp Aleppo pepper
Zest of 1 lime
It all went onto 7 wooden skewers and were grilled on a hot grill pan for about 10 minutes total, spooning some excess marinade on the cooked sides after flipping them the first time.
Sides were Near East rice pilaf and sautéed sugar snap peas, red bell peppers and onions in safflower oil and Penzeys Tuscan Sunset and some s/p.
This was REALLY good, and I’m going to keep this in my repertoire for future dinners.
There was wine. And there are plenty of leftovers for work lunches.
