Friday.
Wanted a steak tip.
Also wanted a salad.
So I made a salad with steak.

Butter crunch lettuce, spinach and sorrel leaves, tomatoes, sliced radishes, grated carrots, goat cheese, dried cranberries, homemade sourdough croutons, and grilled sliced steak tip with maple-balsamic vinaigrette.

There was wine.

Today is the first day of summer, its 55 degrees, sprinkling and I have the heat on. :disappointed:
Pork tenderloin, rolled in garlic, fennel, rosemary, pepper, wrapped in bacon then seared and roasted. Roasted asparagus with hollandaise and Aleppo pepper. Tomato, cucumber, red onion salad with balsamic vinegar & oo dressing, lots of basil.

Mrs. P made her delicious blackened Cajun shrimp salad for dinner. Unfortunately she blasted it with fresh shaved parmigiano reggiano before I was able to get a good picture. It included grilled figs, roasted mini peppers, sautéed red onions, arugula, fresh basil, and drizzled with reduced balsamic. It was enjoyed al fresco, on the deck, on a rare beautiful sunny, low humidity day. We started off with quacamole and an espresso martini. The salad went great with an excellent red blend.

a few meals I hadn’t posted yet…
more of the spicy TJs squiggly noodz…

last night I made spicy caramel chicken, a recipe by Chef John - a Vietnamese dish, sided by broken rice and eggplant with Thai basil, and corn on the cob with a really delicious sauce of scallions, sugar, fish sauce and hot oil. Dare i say… better than butter?? nah. but pretty damned good.

and tonight, the BF’s pad kra pao, which has become an old standby here. Could have used more Thai basil but we were almost out of it. also, he made a grated cuke salad - like most of the rest of dinner, with fish sauce and a little sugar… I had mine with a bed of cabbage under the rice for some crunch and calorie-saving.

I cleaned out the fridge and freezer today and I have a lot of food in there… I had a few pre-CSA veggies left when the CSA season started a few weeks ago so when the CSA season started I’ve been behind ever since. In previous years I’ve been much better organized. So tonight I had a soba noodle salad with salmon and the last of the cukes. Only 12,000 veggies left to go!

Chicken tenders, one in slider form, the other on a piece of plain white bread, surrounded by pickles.
Ordered “hot”, and it was plenty hot for me. Saving the tender for tomorrow. :sweat_smile::crossed_fingers:t2:

Finally a nice Saturday after 13 weekends of rain! Errands and repotting some basil and parsley plants I didn’t get a few weeks ago. A wee bit warm today while working outside, but the next 3 days will be upwards of 95° to 100° with the heat index. It’s gonna be a scorcha!

Summer is officially here with my FIRST vodka and lemonade of the season. And dinner was fish tacos with sauteed Icelandic cod, purple and green cabbage, pickled red onions, cotija cheese, parsley as a stand-in for the dreaded other green herb :wink:, and a lime crema sauce. Flour/corn tortillas.

Side dish was a corn pasta salad with corn kernels from last season, ditalini, red bell pepper, minced red onion and chives from my deck garden with a buttermilk-pepper dressing.

And did I say there was a V&L? Well, there were two. :wink:
