Sorry to hear this. Wishing him all the best in the job search
People at the company suspected something was up. It was just a question of when. But, thank you!
Thank you!
Chicken breast seasoned with s/p and Penzeys Tuscan Sunset, pan-seared, then into a 350° oven for about 40 minutes with a combination of honey-mustard dressing and lemon juice, basting twice.
Near East rice pilaf and roasted asparagus alongside.
If your BF was a full time employee, as opposed to a consultant, then he should be eligible for COBRA benefits, which would allow him to get additional medical coverage for up to 18 months. It is a lot more expensive then his current coverage, but better than nothing.
Thanks! He’s aware, but we’re hoping we’re not going to have to go that route unless we have to!
My elderly neighbor recommended my services to a friend of a friend who occasionally needs rides around town. She got in touch last night a little panicked, as she desperately needed a ride to the train station about 45 min away from here this morning. As luck would have it, I was able to take her She’s originally from Bucharest, but spends every summer in France, her “adoptive” country, and we had a great conversation about Yurp, and The General State of Things
It was also a good chance for me to see how driving longer than 20 min would impact my injury, and I’m happy to say that I had no major pain after a 1.5 hour roundtrip, which means I can look into going back to driving more regularly again ! The random conversations are what I miss most about that job… well, that — and making money
As for WFD tonight, Mediterranean mish-mash pasta with BTS: melted a few anchovy filets in olive oil, sautéed crushed garlic, toasted fennel seeds & finely diced shallot, toasted a lil nub of tomato paste, added a splash of white wine to cool things down, let that mostly evaporate, then added the last of the jar of Aldi’s spicy garlic arrabbiata sauce. Crumbled Greek feta to tame the heat a bit (unsuccessfully, I might add: that stuff is HAWTTT!), added the big fat shrimp at the end to just cook through, fresh basil to finish, then tossed it all with fettuccine.
Simple green & red baby leaf salad with avo, flavor bomb tomatoes, walnuts, and walnut vinaigrette on the side. No pics as you’ve seen it a million times.
Pretty sure @Mr_Happy inspired dinner: crispy tofu katsu w/homemade “Bulldog” sauce and brown short-grain kare rice (homemade sauce based on S&B curry powder ingredients list + Melissa Clark’s version). Cucumber salad with ponzu and pickled ginger as the side.
WOW!! Really pretty chicken!!
Take-out Thai tonight. Vegetarian green curry, shrimp Street Style Pad Thai, and some fresh rolls. No photo!
So sorry and sad to hear that!!
Best wishes from Toronto and GOOD LUCK!!
Thank you, @THECHARLES !
I agree. COBRA should definitely be a last resort. I retired 18 months before my wife and I were eligible for Medicare, so I had to take COBRA to cover us until Medicare kicked in (11 months for me and 16 months for her). It was very expensive. I guess I could have looked into Obamacare, but I liked my work plan which our regular doctors were under plus the good dental coverage. Just note that most new jobs usually have a probation period (usually 3 months minimum) before a new employee can be eligible for full health coverage.
Anyway I wish your BF the best of luck!
Gee thanks super simple prep.

Those are some nice looking pancakes, great job!
Thank you! This is my 3rd or 4th time making them - it gets easier every time.
