What's For Dinner #116 - the Mardi Gras / St. Patrick's Day Edition - March 2025

The IHOP in our town is so bad it has drawn comparisons to Waffle House (I’ve not eaten at either, but I used to deliver from IHOP). Supposedly it’s under new management…

The one nearest to us has been deemed a ‘ptomaine palace’ because of the frequent reports of food poisoning picked up there. If I were to eat pancakes out, it woud be at one of my two favorite breakfast shops.

I don’t like US-style pancakes. If I were to have any, it would be my late mom’s German pancakes, which are much more delicate — more similar to crêpes.

She’d occasionally get a dinner craving for them & would crank out 10 of them, and easily put away at least 6 of them  Preferably sprinkled with sugar, a thick line of apple sauce or rhubarb compote (which I hated back then) down the the middle, then rolled up like a burrito — minus the tucking at the ends.

Much as I already preferred savory over sweet foods as a kid, I would give anything to share a pancake meal with her right now :broken_heart:

Deceiving appearance! Taste better than look!
Decent portion for the price!
Fairly aromatic with a slight hint of gaminess…reminds me of a Rein Deer Stew I had in Oslo, Norway!
Surprisingly tasty for a frozen TV dinner. It even contains a red wine taste and tannic component!
A touch overly salty, otherwise, perfectly acceptable.

The Lakeview Diner in Toronto has all you can eat pancakes today.

I’m celebrating that my 20 year old son (2nd year college student) is starting to cook a lot more of his meals. Last year it made less sense because first year students are pushed into an expensive meal plan.

He made chicken picatta for himself and his roommates. He’s been cooking all year but seldom sends me pics.

One of my favorite chicken preps, and a great one to learn to perfect! How sweet of your son to cook for his roommates, too!

Thanks. He says “they eat like crap” and none of them know how to cook. My daughters had similar experiences with college roomies.

To be fair, I didn’t exactly cook like I do now when I was in my 20s and single. A slice of bread with melted cheese on top was often dinner. I might’ve felt more inclined if I’d been cooking for other folks.

It’s Mardi Gras in Central PA, and it’s actually celebrated by more folks here than you’d think, presumably thanks to the multitude of German immigrants here.

My festivities so far involved a quick translation for a German restaurant group I work with, dealing with the eternally starving cat, laundry, and figuring out what to wear tonight.

Our sax player texted us earlier today that he’d thrown out his back — poor guy, the same thing happened to me the day of our First Night gig: telehealth appt + one metaxalone FTW! Hope he’s back in shape for our Thursday show :crossed_fingers:t2:

As for tonight, we’ll have a sub who’s played with us before with no prior knowledge of our repertoire or set list , and we just added a few new tunes. Should therefore be a prettttty interesting gig, but given the nature of our Mardi Gras shows I’m not too worried. We just provide the musical tapestry for the revelers, so any minor (or even major) fumbles will hopefully go unnoticed

Appropriate sustenance will be provided in the form of oyster shooters & muffulettas, gumbo & jambalaya, oyster po’ boys & King’s cake…. but I don’t tend to eat right before a show (or during a break, or after ), so I’ll snack on random leftovers in the fridge while getting blinged up. Maybe I’ll snag a taste of someone else’s plate/bowl at the bar later :smirk_cat:

Laissez les bon temps rouler ‚ if just for one night…

Do you remember those boil-a-bag dinners?? Creamed chipped beef or Salisbury steak?? You boiled the bag, then poured the contents over a slice of bread, and that was dinner.

You’re pretty fancy. I was eating Cup o’ Noodles or Kraft Mac & Cheese straight out of the hot pot.

I’m almost relieved to say that I don’t, but I grew up in Germany, where such wondrous foods were not around in the early 90s

I went to college in the early to mid '80’s and yes, be glad you missed the “Boil-a-bag” dinners.

Some past dinners, hastily posting…

Light dinner I made for me, mom, and dad on Saturday (we had a hearty lunch out a few hours earlier). RI clam chowder accompanied by delicious local sourdough bread and excellent red wine. I added beans and kale to the chowder as I’m wont to do.

Came home on Sunday and recycled the chowder for B, along with roasted steelhead salmon (farmed, so I turn my nose up to it), sugar snap peas, and my rice mix. Breakfast for dinner for Spring Onion (still trying to get the hang of cooking eggs, a food that I loathe). Delicious local sourdough brioche toast.

Dinner tonight of leftover salmon and Brussels for B, a tasty pasta/broccoli rabe/calabrian chili/garlic/lemon/delightful edamame pesto for both of us. That’s B’s bowl; he apologizes for the poor plating. Cheese ravioli for da kid.

Stir-fried beef, sugar snaps and shiitakes over jasmine rice. Not my best stir-fry (too gloopy) but PFT, used up what needed to be used up, and warded off hunger for another day.

Using up things that need to go from the fridge and freezer, so we have roasted haddock with mushrooms, thyme, and sage, the last of the twice baked potato, and a green salad. I made ranch dressing for the salad from Mayo and yogurt, thinned with some half and half, along with several shakes of Hidden Valley seasoning (purchased for Mississippi Pot Roast and then mostly forgotten in the pantry).

We lived a couple of hundred feet from our elementary school and came home for lunch every day. Boil-in-bag was a staple.

Char sui-y-ish pork loin, roasted mushrooms and blanched gai lan drizzled with the same marinade as the pork.

Am I the only one that has pancakes on shrove Tuesday? Oh well, more maple syrup for me  Caesar salad to start so I get the mandatory vegetables in.
