What's For Dinner #116 - the Mardi Gras / St. Patrick's Day Edition - March 2025

It was kind of a “throw together” soup. Included in that particular soup was two onions (chopped) and four large carrots (shredded) softened in olive oil. then I added two cans of cream of chicken soup and two cans of milk, 1 head of cabbage (shredded), 6 cups of chicken broth, one large chicken breast (shredded) and 2 teaspoons of cumin. I let it simmer until the cabbage softened (slightly) but was not mushy.

The bread bowls were a fairly standard bread recipe. 1.5 cups of warm water, 4 teaspoons of sugar, two teaspoons of yeast (let yeast bloom), add 4 cups of flour and 2 teaspoons of salt. I knead (by hand) and add more flour until the dough is not sticky. Then knead another 10 minutes or so. Put in a warm place (covered) to rise for about an hour, form into balls, proof in a warm place (covered) for about 30-45 minutes. Brush with milk (because I’m almost out of eggs), take a razor blade and cut cross into the balls. Bake at 375(F) for 35 minutes – check internal temp for at least 190(F) – because my oven hates me. Let cool slightly, cut a small hole in the top, dig out some bread with a strong spoon (or clean hands), ladle in the soup and serve!!

Not lately! Work in the opera world has dried up in a big bad way since Covid, and German houses are trying to hire local. I’m calling it early retirement :roll_eyes: :sob::rofl:

Improvised this when I got home today - Mushroom stroganoff tot-tine (tater tots poutine). I didn’t have cheese curds in the house, so I baked some cubed paneer with the tots. Used up some lingering heavy cream and mushrooms! (Also - very tasty!)

Yes and yes! Less than pre-Covid, but gigs do still pop up. Fortunately my day job and other side gigs keep me afloat - you know how that goes!

My PIC was finally feeling well enough to go back to work today. It’s his bday Saturday, so I hope he’ll be 100% by then — plus we have our whirlwind trip to NYC and Philly next week, so I better not get his crud, either! :crossed_fingers:t2:

We had to stay up until midnight :scream_cat:last night to lock in a founders’ rate for a gym that has been advertising on SM for several months now, and that is finally going to be open for bidned at the end of the month :partying_face: They had a big event today & we picked up some shwag before our PM cuppa. It’s a 5 min drive from our house & I’m pretty stoked to finally get back to exercising. First personal trainer sesh is free & already scheduled! Swoleness, here I come :grin:

As for the most important question of the day, i.e. WFD — why, it’s Taco Thursday!! We’d picked up TJ’s fully cooked pulled pork a while ago, but since my dude was taking a meat break we hadn’t had a chance to make it yet. TBH it didn’t look particularly appetizing when I first took it out of the nuked pouch,

but once I crisped it up in the pan & added a few shakes of Penzey’s taco seasoning it looked more appealing.

Served on fried-up flour tortillas with avocado, chopped onion & cilantro, pickled jalapeño & a variety of hot sauces it was pretty tasty.

2 tacos each were a-plenty, and we have another ½ lb. of that pulled pork left. Probably not a repeat purchase. Carnitas aren’t that much work, after all.

Coming up for dessert: my PIC’s killer margaritas — the first in far too long :cocktail: :star_struck:

I cooked for the fam before attending a town hall meeting. The meal was homemade baba ghanoush and hummus with lavash and crudite, zhug-coated baked salmon filet (with coriander and za’atar), crispy roasted cauliflower with ras al hanout, and cumin-lemon marinated garbanzos (TJ’s). Hope it was good!

back to salad for me, courtesy of El BF. just your standard veggie/eggy yumminess, hiding a little short-grain rice in the middle, and some toasted pita slices on the side.

and for him, Chinese sausage fried rice. also yum, because of course i had to cadge a couple of spoonfuls.

Tomorrow’s dinner will be a pitty party for me. Bad results from the latest MRI. S#%t!
I didn’t get to the lamb roast for St. Urho’s Day, so it’ll be roast lamb wth coffee gravy, Yukon gold potato something, asparagus with ‘Holiday’ sauce and to honor St. Patrick’s Day earlier this week, that Guinness cake I’ve been jonesing for. FFS, it sux getting old!
