What's For Dinner #102 - the Out With the Old Edition - January 2024

Two from Anthony Bourdain’s Les Halle’s Cookbook - Onglet Gascon (hanger steak with a wine and mustard pan reduction) and his aunt’s tomato salad. Last of the onion rings hiding in the freezer. Pinot Noir for me and IPA for him.

Loosely followed this Rancho Gordo recipe, using 1 long sweet Italian sausage link, whatever baby spinach was still good (instead of arugula), shallot instead of onion, some Key West pink shrimp that had survived in the depths of my freezer, adding a sprinkle of Aleppo pepper during final cook of the spinach and grated Parm-Reg after plating.

Wine.

Cajun seasoned sauteed shrimp, cauli rice with onion, garlic, carrot, splash of chicken broth and parsley. Mixed greens salad, blood orange, roasted beet, fennel, orange marmalade, rice vinegar, oo & blood oranges zest dressing. Wine.

Pan pizza with Italian sausage, pepperoni, and black olives. Romaine with homemade Caesar dressing.

We enjoyed another outstanding dinner at James on Main, in Hackettstown, NJ, including rabbit cannelloni with taleggio, sweet potato velvet, dark chocolate & roasted poultry glace; wood fired beef brisket ragout with black truffle ricotta gnocchi, local hog cheek bacon, Valley Shepherd’s “Soprano” cheese; crepinette of duck confit with local beetroot & petite salad, goat cheese foam, smoked cherry conserves, sourdough toast; diver scallops with Lobster butter, wood fired corn cake, chestnut mushrooms; duck potstickers with pineapple ginger chutney; chili crunch calamari and rock shrimp with Thai basil & delicata squash, miso aioli; butternut squash bisque with stout and fresh baked oatmeal raisin cookie crumble; crispy hand cut fries. It all went great with an excellent red blend and cabernet.

Nice rainy day today. No snow yay . Watching playoff football.
Sautéed bacon , onion , and cabbage. Boxed spanish rice pilaf with added cilantro. Oven fried chicken. Cheers .

A good friend gave us some fresh Basque blood sausage, so glad he shared! With Yukon Gold potatoes, steamed then fried, seasoned with a generous amount of good Paprika & Kosher salt, nice steamed green beans. This is my DH plate, we both really loved this dinner!

I had intended on making pork chow mein but I was too tired to cook tonight so I ordered Chinese take out. Won ton soup, egg roll, sweet and sour chicken balls, garlic ribs, and chicken fried rice.

Game night at casa lingua – Rummikub at the table & some dumbass football on the screen :roll_eyes: Apparently, our friends had never played the game before, so there wasn’t much of any ass-kicking, but rather a lot of explaining – some of it repeatedly. Who knew the concept of having to leave a set of three tiles intact was such a difficult one? Certainly not I :woman_shrugging:

The Detroit-style pizza we ordered was scrumptious as ever – our friends chose a meat lover’s and a pepperoni pizza, and we ordered the triple threat and the garlic dill pickle, of course.

It was exasperating and somewhat painful to watch my friend (who seems to have developed an eating disorder over the course of the last year or so) try to pull apart one of two slices she’d put on her plate (with zero plan of eating both) with a silver spoon, and I finally encouraged her to pick the damn thing up with her hands. She then announced that she was “absolutely stuffed” 2/3 into her first slice, and took the rest into the kitchen. Le sigh. I can’t imagine how difficult this development must be for her partner.

Incidentally, I’d managed to write another verse & bridge for my new food/body image song yesterday, as it seemed a little short when we performed it. Amazing what one can do if one manages to focus on a task for longer than 20 min :crazy_face:

No idear WFD tonight. Gotta inspect fridge & freezer contents & figger something oot.

I got some more catfish, filets this time, and decided to saute in the non-stick, instead of air-frying. It came out well.

We are in impeding-departure-sadness-mode (even though I’ll be back soon), which means my appetite has dwindled significantly and everyone else is doing their darndest to feed me All The Things :joy:

Crab that was supposed to be curry, but my sis was exhausted so I took over and made a quicker but still favored version, butter garlic crab. A quickie egg fried rice to accompany.

Mom had more toasted garlic bread with spice-crusted paneer (same masala as the fish below) and vegetable barley soup (we all had the soup).

Also, coconut water as an aperitif (and fresh coconut “meat”, yum).

Appetizer was another round of chaat — a few pani puri and dahi batata puri for mom, and sev puri for the rest of us.

Ridiculously fresh promfet, stuffed with mom’s standard masala paste and pan-fried. Dal and rice is all that’s usually needed, but we had some leftover vegetables (cluster beans, ivy gourd) too so I needed a chapati to start before I switched to rice.

Scotch broth, which is one of my favorite restaurant dishes here. Supplemented with a steak sandwich from the same place, the leftover potato-coated lamb chops, steak fries that came with the sandwich, tomato avocado salad, plaited cheese, and toasted garlic bread (the last 4 constituted mom’s dinner).

Chicken soup with turmeric, garlic and ginger. This is based on a post by Baked by Melissa (she’s a hoot). You make a standard chicken soup and then add a puree of garlic, ginger and fresh turmeric. I adjusted my puree so that is was lighter on the garlic and heavier on the ginger. Delicious and so easy to make. The lemon gave the soup a little extra punch.

I wanted to thank @linguafood for sharing that celery salad with us. I made it for lunch today, and it was really delicious. I went simple with no cheese, because I didn’t think it needed it. So mine was just celery, dates, roasted pistachios, Salt, pepper, lemon juice, and olive oil. Delicious, wholesome, and definitely a repeat.

Aw, that’s great! I think the ricotta salata adds a nice salty, creamy note, but yours sounds really good and refreshing :slight_smile:
