Another breakfast for dinner kinda day.
Bacon/mushroom/tomato and cheese omelet with crispy latkes and a toasted English muffin.
I decided to finally try my hand at the spicy garlic shrimp I enjoyed from Jenny’s food truck on the North Shore of O’ahu.
I’d started a thread upon my return, which almost immediately fell victim to the pervasive HO phenom lovingly referred to by some as “thread drift”
Thankfully, I got at least a couple of helpful responses relating to the query at hand – most notably from @Amandarama, who posted a recipe link, detailed report & mouthwatering picture of her scrumptious creation. Thanks again!
Being who I yam, I still didn’t follow any specific recipe & just looked at a few for inspo
I tossed shell-on black tiger shrimp in flour seasoned with s&p and hot Hungarian paprika, then fried them up in TPSTOGAG (ghee and garlic) with a couple tablespoons of Turkish hot pepper paste added for heat. My PIC supplied the rice to soak up all that spicy, garlicky, buttery goodness.
I wasn’t a fan of the flour, even if it helps the sauce stick to the shells better, and there wasn’t enough sauce for the rice to soak it up. Spice level could’ve also been higher. Roasted broc with lemon on the side.
Not quite the same as sitting at a picnic table in paradise surrounded by surfers happily sucking the sawce off of their shrimp, but it was a delicious reminder of a really good time & certainly not bad for a first
Good use for that ham you mentioned earlier! Do you ever make cornbread muffins with flecks of ham for breakfast?
Delivery pizza to the rescue tonight after a too long work day. Quattro Formagio, with mushrooms, onions, and garlic.
Tuesday, tacos, tequila
Pork mole & poblano tacos, with onion, garlic, radish, avocado, coteja cheese. Margaritas.
Thanks for the cornbread muffin idea… We had leftover soup tonight and I made up a quick batch of Jiffy cornbread muffins. Great addition to the meal!!
A new-to-me recipe for fish stew. I used Alaskan halibut, and half-a-dozen shrimp we had in the freezer. Subbed Old Bay Hot Sauce for the tabasco. Quick and tasty, this will go in my growing collection of chowder recipes.
Tonight served with salad greens in vinaigrette, and a garlicky loaf of homemade bread.
Left over pork roast and stuffing with some pan roasted brussel sprouts. Good Tuesday night dinner that didn’t require a lot of thought.
What?! Gotta find this for my Baltimore-born, spice loving husband—it would make a fun stocking stuffer.
Lol! It was my Baltimore-born BIL who years ago turned me on to Old Bay in the first place. When the hot sauce first came out as a “Limited Edition”, orders were limited to 2 bottles. One for me; one for BIL - yay! A quick search of the internet tells me the hot sauce is ubiquitous now.
Consumer Alert: For BIL’s Christmas stocking this year, we found a can of Old Bay Seasoned Peanuts.
Tonight’s dinner was Vietnamese caramelised pork bowls. I liked the recipe well enough but it could have been spicier.
I don’t know if we are going to have a specific “Christmas Dinner” thread, but I’ve started planning our Christmas dinner.
My local grocery store had spiral hams on sale (digital coupon) for $.97/pound. I got up early, did my digital coupons and headed out. Even though I got there a few minutes after they opened, there were only 4 hams left, I grabbed a 9.5 pound one (which was the smallest one there). That will be fine for the two of us and we’ll still have plenty of leftovers.
The ham was the only item (on my menu) that worried me. I thought I might have trouble finding one that fit into the budget, but that problem is solved. I’ll cobble together the rest of the sides and we’ll be ready for Christmas.
This looks like all of our celebration meals when I was growing up. My grandfather, a retired civil engineer, used to put out quite a spread every time. Funny I was so sick of that food back then. I miss it now and your pix bring back all the memories of sitting at the table with my 4 grands all there.
Have you made suquet? A good one for when you have a little stale bread. A lot of recipes skip the picada or only use almonds, but I love the fried bread addition, so I’m pro bread.
I have not, but it sounds delicious. Thanks for the reference!
Leftover meat lasagna(from my sister’s Hanukah dinner ) topped with bacon/mushroom and tomato sauce, side Caesar salad with homemade crostini.
Fresh baked(frozen, school charity kind) Chocolate chip and oatmeal raisin. ![|16x16]
Roasted salmon and potatoes with a mustard mushroom cream sauce and fresh thyme. Loosely based on the ATK roasted cod on a potato raft. Delicious with pretty much any fish!
We did a little holiday shopping at the end of the day and came home very hangry. Took a stroll through the freezer and…Trader Joe’s for dinner!
Pork gyoza pan fried with a nice crunch on the bottom, Thai shrimp dumplings steamed up with fresh avocado. And we split the last lone scallion pancake after 10 minutes in the air fryer.
Tonight’s dinner was stirfried lo mein noodles with vegetables and pork except I used udon noodles instead of lo mein noodles since I felt like a thicker noodle tonight.
A Rana 5-cheese tortellini bake using half a family size bag, with cooked sweet Italian sausage all broken up in the pan with some chopped onion added and cooked down, and then a hefty Tbsp of caramelized onions, with some broccoli I needed to use up which I had roasted in the convection oven.
Sauce was about 2 tetrapaks (3 cups) of Pomi crushed tomatoes, dried parsley, basil, and oregano, some Aleppo pepper and a handful of grated Parm-Reg. Mozz on top and baked for 25 minutes.
It’s Wednesday, but I had a glass of wine.
