A mini Irish soda bread served with blackberry jam. I was in the mood for soda bread and made what I thought would be an appropriately sized amount for this ramekin. In fact, I should have put it in two ramekins, I was lucky it didn’t overflow the container.
In spite of that, it hit the spot and removed easily from the ramekin, but next time it will be in two.

Fridge-sweep breakfast tacos. Leftover Tex-Mex chicken breasts. Corn tortillas. Coleslaw fixings. Sriracha mayo. Chipotle vinaigrette.
Eggs on eggs is good eats.
I wish I had some uni so I could make egg on egg on egg. (Which I have had!)

You could have had an egg-on-egg-on-egg if you had sliced a hardboiled egg into thick slices and put the egg salad and roe on top of the slice. Just sayin’. ![]()
