What are you baking? October 2024

Morning Bundt Cake from Baking with Dorie. Many ingredients in this cake. Spices are cinnamon, cardamom and pinch of all spice. The cardamon stood out. Also muesli. Yogourt. Also chuncks of citrus fruit, i used clementine. The bundt is oil based. When bundt is baked, it is brushed with a citrus syrup. On Sunday the muesil was really chewy but today it has softened. Its a big cake, i used a 12 cup bundt. I liked it but my family loved it.

I missed your cheese biscotti mention, and am now also looking up these cheddar wafers – is it these? These look the same but lower baking time.

Clementine blender cake with evoo. The entire Clementine is microwaved for a few moments and then puréed in the blender. Yogurt, ( I used half ricotta) evoo, sugar is added and blended, flour is put in last and briefly mixed. I used a FP. This is 2/3 of the cake recipe, the top has some candied orange peel segments. This is essentially the same cake as the “ magic” whole lemon/orange cake where the citrus is used uncooked. Some vanilla ice cream would be a nice accompaniment.

Ooh orange cake is some kind of sign.

My friend is going to visit her kid at college next week and I offered to bake something to send him (bec we had been talking about the care packages I recently sent out) – he was my partner in crime during my orange olive oil cake rabbithole a few years ago – as in, he was the enthusiastic consumer of every one I baked :rofl:

I could cop out with other things he loves like chocolate chunk banana bread or brownies, but maybe orange cake is on the cards.

Always good, would you consider including chocolate flakes or chocolate jimmies in the cake?

Funny, I was just thinking about that as I wrote “chocolate chunk…” – but it strikes me that people can have very weird reactions to chocolate and orange together, so maybe not, as that was not a combination previously tested on him :smiley:

That was the reason I suggested flakes or jimmies as they don’t overwhelm the cake, a lighter touch than chocolate chips. I almost made a chocolate chunk evoo orange cake instead, (scrummylane.com) which I might make 1/2 in the next few days.

Yes, that’s the chocolate orange one I was thinking about. I’ve made the Torta tenerina but not from that site. It was from an Italian site and it was delicious, a very highly regarded cake in the Italian world :yum:

Are you using a mandoline something similar to get such precise slices?

Thank you, it’s easier than it looks, in fact quicker than a spiral effect. I used a very sharp Japanese knife. Cut off the four “cheeks” , slice thinly and just slide the knife under each section and fan gently. I might never go back to a more conventional arrangement. The second one I peeled the apples and although maybe not quite as pretty was easier to get a clean slice. I hope you give it a try!

I got the clementines last week at WF from a mound of citrus, didn’t look to see if they were organic, will look next time I’m there. Are you looking for organic citrus, there might be some mail order places that specialize in organic.

Lol. The stamp is from Nordic Ware. It comes in a set if purchased from them, but you can sometimes find it individually elsewhere (on-line cookware stores, ebay, etc.).

I would get it but I suspect it would linger in the dusty corner with my Spritz cookie press… tbh I’m not sure if I purchased one or just feel preemptive guilt :joy:

I have both, maybe I should put them together in a drawer and see what happens.

(I bought the spritz cookie maker for indian things, used it a couple of times for that actually, but now it’s another paperweight.)
