Rhubarb Carrot Cake. An absolutely delicious cake that has a moist crumb and is lightly spiced. The whipped mascarpone frosting is rich without being sweet. It is very staple. I also made candied carrot strips

. I brought it to a potluck yesterday and everyone loved it.

I must add that my cake was baked in 55 minutes. One other thing that I have done with my last 2 cakes(seen on instagram). I know it was a well known baker that recommended it. After baking let cake rest for 20 minutes and then wrap in plastic wrap and let it cool completely. The theory being the moisture doesn’t escape and cake isn’t dry. I noticed the difference.

I have had the same results wrapping in cling film, although I don’t remember to do it most times!

An impromptu birthday dinner and a busy schedule meant I needed to make something quick that didn’t require shopping beyond the corner store/bodega across the street. Simple chocolate cake baked a day ahead — basically Amazon cake, but I make it with half brown sugar and bloom the chocolate and some instant espresso in hot water instead of whisking it with the dry ingredients and using cold water — with the addition of about a third of a cup of semisweet chocolate shavings stirred in, and since I had a punnet of raspberries that needed using, I poked 30 into the batter before baking. On the day of, I added brown butter cream cheese frosting (cream cheese from the corner store).

I’m so impressed by some of the bakers on this board. “I just threw this quick thing together…” Meanwhile it comes out looking 10x better than anything I’ve ever made :laughing:

Oh have a wonderful time. Its such a lovely place and area. I bought my sour dough starter there in 2016. Haven’t been there since then.
