This would make things go faster. I use it for so many thing. Cutting even bars, strips for cinnamon rolls, even squares for pastry, etc…
By the way, SIFT got the James Beard Foundation 2025 award for best baking book
Looks wonderful (the texture looks amazing) but each cake needs more “stuff” in it!
Ooooooo yes !
Two slices of nectarine and a blackberry or two of raspberries was just about all that could fit across the top of each cake, the slice is a little deceiving. More than that and it would be pretty mushy. Why don’t you give the recipe a try!
Interesting project! Please continue to share results.
FYI Sift is $2.99 on Kindle in the US today. Snagged it.
Its sort of overwhelming at first. You dont have to read about all the techniques at once. When you pick a recipe and if theres a certain technique involved theres a reference to the page. Dont know how it would work with kindle.
Thanks for the tip. If it’s of enough interest to me, I’ll buy the book. I love kindle for an affordable preview.
I would love to, but my activities in the kitchen are limited by health issues. I’m living vicariously through this thread! (and being a wise guy!)
@Stef_bakes - I love her book and the substack! I subscribe to the free version of the newsletter and it’s wonderful. Your pie crust looks great - did you use American or European butter?
And the plated dessert, the 2x2” mini cake with plum and raspberry has accompaniments of roasted apricot gelato, apricot sauce; roasted plum gelato with plum sauce. In the center is strawberry sauce topped with diced nectarines.
Nuff said!
ETA…I stopped at adding mint and whipped cream

If this does not constitute food porn, I don’t know what does !
An ideal dessert.
Only if I had put the whipped cream on it…otherwise, it’s all that healthy fruit!
That’s beautiful, Sally! What was special about the whipped cream?
Just like the Supreme Court justice said decades ago, you know it when you see!
Yup, I knowed it!
I got a new dessert transport thingie! Two 9” pans can fit in here completely flat and protected - and the whole thing zips up and has a nice strap. I carried a pie in a glass plate and a 9” cake with no trouble.
What recipe do you use?
