I finally made it happen - the SK apricot pistachio bars! I’ve wanted to make these for years and thanks to a glut of apricots and encouragement from the fine folks here, I stopped procrastinating. The apricots looked kind of like creepy fingers due to how I cut them, but powdered sugar covers all manner of sins!

Just mixed up some of Bravetart’s English muffin dough. Going to make a batch of regular chocolate chip cookies in a bit since I have to drop something off for my ex and those are his favorite. The sourdough discard version sadly was a failure. I did see a recipe for sourdough discard English muffins on Serious Eats earlier but the timing seems nuts and I don’t have ring molds so I am intrigued but am going to pass.
Made a half recipe this morning! (12 muffins, for the two of us.)
I didn’t have to add any liquid, the zucchini was sufficient moisture.
Your “23 minutes” instruction was exactly perfect.
(We had a little cream cheese with 'em, seemed right.)
I complained a little about having to grate and chop and soak (raisins) and the man said “well, next time make double and freeze some”

I’m impatient and use the microwave. It’s totally OK if it gets too soft. Just cool a little bit.

Ha, I also am impatient and did the same thing, but I don’t think enough, and I also neglected to fully whisk together the cream cheese with the sugar and vanilla before mixing in the heavy cream. Once it was assembled, couldn’t even detect the little lumps, thankfully!
My friend made the dreamiest fluffy cheesecake after overmelting her cream cheese.
Update - the cake was well received - I am glad I ended up doing some of the topping in between the sliced layer because it was a better ratio of cake to topping than the recipe as written. It’s a bit of a dense cake so the light topping was a nice counterpoint. The topping did as the recipe said and held up well to being at room temperature for several hours, and continues to be delicious as we nibble the leftovers from the fridge. The bbq was a smorgasbord of food, with at least 15 dishes for dinner and about 10 different desserts. Almost every neighbor on the block attended, as well as some former neighbors who have since moved away. Grateful for our little peaceful enclave!

I just finished my pan of them. I’ve come to the conclusion that I need to find a better way to slice the apricots. The long slices don’t eat well. I might just do large-ish dice next time.
