What are you baking? July 2025

Waiting to see your Swiss roll, maybe some quick raspberry jam for a filling? But I keep thinking of the lamingtons , I wonder if a schmear of jam would be sufficient to hold the coconut in place.

You mean instead of after the chocolate coating?

If you don’t want chocolate outside, you could sprinkle coconut in the middle, when you spread the jam.

Swiss roll will have to wait till next week, maybe I’ll make it for my mom!

I meant skipping the chocolate coating, but including the coconut with the jam in the middle would work for me, then just a dusting of confectionery on top….food for thought, Ty!

Pink glace icing would also be nice. Used to be my favorite kind of icing.

Though when I think pink and coconut, I can’t not think of old fashioned coconut ice!

Made two, very similar types of cookies this past weekend for various friend visits… not sure what I was thinking? I wanted to try a rye and chocolate shortbread recipe from Baking with Dorie, which are slice and bake. They seemed pretty good to me… although I am a fan of rye in general. I overbaked the first batch, and took the second one out a few minutes before the recipe recommended. Then panicked, didn’t think that I had enough cookies to give 3 different friends ( I realize this is nuts even as I type the words) and so made Tara O’Brady’s chocolate chip cookies . I used chopped lindt bars in both recipes which did make them a bit samey. They seemed like a hit though…

I omit the cinnamon, double the sugar, and sub oil for some/all of the butter. More chocolate chips, of course!

Swap blueberries for chocolate chips?

Now my daughter thinks the icing was too skimpy so next time for a double cake I’ll also double the icing.

Thank you! Was precious owner’s taste, was never able to remodel the kitchen. Some tiles are prettier than others … I really like the asparagus.

I thought they would be nice for breakfast and they were! They did not get mushy overnight but stayed nice and moist.

An almost Lamington, not dipped in chocolate sauce prior to coconut. This has a fresh raspberry compote as a filling and brushed on the sides as the glue for the coconut. The cake was two small slices of the Chinese chiffon Spongy. @Saregama @pavlova

Tahini cookies that have the texture of halva. No egg, leaveners. Instead of butter there is oil. Icing sugar instead of sugar.
Recipe Turkuaz Kitchen. I was looking over Prime deals and this book was listed at $17.good price. Except when it arrived bill said $32 it was 16 on the US site not Canadian. Wont make that mistake again. Interesting recipes so Im keeping ìt.

This looks so delicious! I used to make a different raspberry cream cake every summer and got away from it, but this makes me want to go back to it.

The intelligent thing to do on so many levels, but this is part of why I know I’m still really a novice baker: the idea of changing things intimidates me!
