What are you baking? January 2026

Not actual baking but posting because recipe uses discard sourdough. Lots of discard.
I used recipe in The Beginner’s Guide to Sourdough by Amy Coyne
Ingredients amounts are different in the book.
In the book 200grms discard, 200grms sour cream or yogort, 225 grms whole milk, 250grms flour, 1/2tsp baking soda, 2 tsp baking powder. These were delicious.
In book the book they are called Saturday Morning Pancakes on webite Fluffy Sourdough Discard.

Pursuant to the previous discussion about neatly (or not) adding flour to a stand mixer bowl: My brother is an infrequent baker, but he puts a mixer through its paces every December with an intense few days of multiple-batch cookie baking. He recently got a new KA mixer, and was waxing enthusiastic about the $150 sift + scale attachment, which lets you measure dry ingredients into a hopper that sifts them neatly and gradually through a chute straight into the mixer bowl while it’s running.

Daughter and family arriving any minute . They live 260 miles north as the crow flies. A long time ago sil mentioned donuts. Also sourdough bread for them. Then another 2 hrs east to Queens to bring grandson to university.

Had been wishing (though not really looking!) for a non dairy biscuit recipe that a lactose intolerant family member could also enjoy, and this popped up in the NYT. Made a batch this morning - biscuits for everyone!

Have used Miyokos for years, but that’s been hard to find lately, so used EarthBalance non soy margarine; 3/4 cup oat milk; 1+ tbsp sugar; 3/4 tsp salt.

P.S. In searches for alternatives to Miyokos for baking, the Earth Balance non soy bars came up repeatedly. Will try in more recipes, but so far the Earth Balance seems to be a good - and much less expensive - option.

ATK’s Cranberry Nut Bread (gift link).

Modifications include using dried fruit (lightly soaked) instead of fresh. Subbing half the weight of the cranberries with mango. Cutting back on the sugar by 10% (my dried fruit was of the sweetened variety). Using grapeseed oil in lieu of butter. Using orange oil in lieu of zest. I made a half-recipe in an 8”x4” loaf pan, which took 45 minutes to bake.

Loved this! A light crumb with very bright, fruity flavors. Will make it again.

Been struggling to find the products, too. According to Wikipedia, change in ownership and some unpleasant legal issues are occurring.

Just found a recipe for the Miyoko’s butter; haven’t tried it, though.

ElsieDee - Thanks for sharing the Miyokos recipe link! Have found a couple of okay alternatives to the Miyokos tub products, and was seeking a solid form that would more or less mimic butter in baking - though nothing tastes like butter but butter!

They are maple flavour donuts. No more than 15 minutes to mix, 10 minutes to bake.
