What are you baking? January 2025

Really enjoyed the whiskey [rum] Bundt cake! I topped it with a chocolate ganache drip glaze and served slices with Goslings rum vanilla bean whipped cream. Everyone liked it! Nice and rich and moist.

Not a whole lot of baking was involved in this. I did bake the tart shell, but mainly it’s a mountain of nuts coated with a butterscotch/bourbon sauce. The shell is sturdy, the finished product is showy, and it tastes crazy lovely. I found the recipe here:

Don’t judge, these are very tasty! And if you really need something fast and EASY (3 cups mix and 1/2 cup hot water–that is ALL.) They brown nice and chewy where exposed and stay soft and sweet inside. The first ingredient listed is coconut, I thought that was a good sign, and they proved to be very coconutty.

An enormous loaf of black bread from Diana Henry’s A Change of Appetite, which was adapted from a Dan Lepard recipe. Contains rye flour, cocoa, instant coffee, molasses and grated carrots amongst the other usual suspects. Some of the rye flour is cooked in boiling water to make an oatmeal like mixture. The loaf is very moist and delicious, almost puddingy in texture when toasted and slathered in butter.

Lemon Loaf, from my aunt’s recipe. Very simple and easy. Taken to work as a partial bribe for rolling out an unpopular new tool at work. The team is angry but they ate the loaf…

Coffee Shortbread. This is a very quick, buttery, coffee and cardamom flavoured shortbread to make. The glaze is just icing sugar and lemon juice. I baked it in an 8" springform. Perfect with coffee. The recipe is from Baking with Dorie.

Oooo this might be a good recipe for upcoming superbowl party ! And I even have this book.

I dont know how many people you are having but this makes 12 pieces and honestly I could have had 2 but its delicious.

Somebody’s birthday this week. Not mine, but I got to choose the cake.
