Spinach tart, repurposed from a spinach casserole. I added an egg, ricotta, parm and prosciutto. The egg gave it a nice rise, it puffed up and was very pleasant to eat.

You’re not an oddball here. I’d say it has become quite common to see declared that oil is superior to butter in chocolate cakes, so you’re in the majority, if anything. I tend to think chocolate cakes having a stronger flavor are more tolerable than other oil-based cakes, but I just really didn’t like this one, and it’s a pretty standard chocolate cake. The crumb really didn’t help it, either.
This is a mostly oil-based chocolate cake that I really like, but it still has some butter, which keeps it from tasting of oil:

Those look wonderful. No baking here. My oven needs a new igniter. My neighbor who owns an appliance service company says it might take a while because we are having a postal strike here and couriers are extremely busy. Oh well, cleaning the house it is.
He also told me never self clean the oven before Christmas. He has so many calls just before Christmas. I did a self clean at the beginning of November.
Oh no, what a time for an oven not to function! So sorry for that, I hope it won’t give you a problem regarding Christmas cookies!
Self cleaning ovens, of which I have, are marvelous but they do have their own problems , unfortunately. Here’s hoping for a quick turnaround!!
Well its so nice to have a next door neighbour who can fix appliances. I phoned him this morning and he came late afternoon after his calls. I know he will try to get the part as soon as he can plus he never charges full service.
And I bet he gets to sample some of your sweets! Nice to have such a good neighbor.
