I checked in with LLM earlier, and she said they’re okay, and lucky enough to be at the top of a hill, so just some basement flooding.
It was okay - I didn’t hate it, but I didn’t like it enough to keep the leftovers. DH didn’t like the meatballs, which we all thought were too salty. DS said the same but also took issue with the texture of the carrot strips and thin rice noodles. And the house now smells like fish sauce, which isn’t a good thing in this case.
I think the only one who was happy tonight was the dog, since he got the carrot ‘cores’ as a snack! (I used a vegetable peeler to make strips, and then gave Rusty what was left.)

In my experience fish sauce varies a lot by brand in saltiness and intensity both, but I am still surprised that 1 tbsp in 1 lb of meat with no other salt contributors made it too salty. Good to know.
Sorry it didn’t work for you – I love Viet pork chops and had them over rice noodles yesterday: it’s one of my favorite flavor and texture combinations with the mix of savory, sweet, crunchy, and soft elements when it all comes together.
My issue is often that the nuoc cham is too sweet and just one-note, or the radish and carrot pickles are missing or scant. (I usually pick rice over noodles as the carb to soak it all up.)
Fish sauce smells so bad, but tastes so good. Sorry this was bad, but thanks for the warning.

Wednesday: I felt motivated to make my annual pastitsio, so I’ll be cooking the lamb in tomato and having some over pasta of some sort.

Summer finally arrives in the PNW. The days are (mostly) sunny and warm, but the nights remain cool, leaving all of us critters with legs (2-4) comfortable. The tomatoes and peppers, however, would prefer it a bit hotter.
Cooking for two in the PNW:
FRI: Pizza Blanca with a parm bechamel, potatoes, bacon, and scallions. Chopped salad.
SAT: ATK’s Go-To Chicken Kebabs – will be practicing my chops on the gas grill. Leafy green salad.
SUN: ATK’s Japanese Steakhouse Dinner with mushrooms and zucchini. Rice.
MON: NYT’s Chicken Gyro Chopped Salad (gift link here). Soft pita on the side (and not in the salad).
TUE: Inspired by @mig’s cookout post with lamb flatbreads, I’ll be making … lamb flatbreads. The plan is to riff off of NYT’s recipe for North African Meatballs in sauce. Homemade pita. Greek salad.
WED: Leftover pan pizza from the freezer. Green salad.
THUR: Blueberry Vareniki from scratch. Roasted carrots.
I’m fascinated by that chicken kebab recipe. Have you made it before?
I have not! I’m a fan of ATK for reliability, so I’m really looking forward to this one. I haven’t done much cooking on our gas grill (I prefer flame, but it’s off limits for the summer due to fire danger), and I figured chicken thigh kebabs would be a very forgiving place to start.
ETA: Plus, I have a fancy new fish sauce to try:

Well it’s been a week. During the last week we learned of Gucci’s and Chonker’s passing and I also learned that Cole the Parliament Hill Cat passed away this week as well. We used to have a cat sanctuary on Parliament Hill and it was closed in 2013. The six remaining cats were placed in forever homes but slowly but surely started dying (they were senior cats and it was time) but Cole was the last one. It’s the end of an era. And on a sadder note we’ve been getting a lot of news coverage about an eight year old girl who disappeared a couple of weeks ago and she was found earlier this week badly beaten by a 17 year old neighbour. She was so badly beaten the pollce thought she had been mauled by an animal. She is now in the Children’s Hospital of Eastern Ontario and one of the neighbours says she is recovering well. That poor kid will be in therapy for the rest of her life. If anyone wants to know more you can Google Quadeville, Ontario and you will find it. (It’s a small town of 200 people about a 3 hour drive west of Ottawa.) I am so saddened by that story, I will probably take a break from the news this weekend instead focusing on happier things. I have no plans for tomorrow but I am making plans to meet up with a friend on Sunday for a gallery visit in the morning then a late lunch. It will be fun! My menus for this week look like this:
Today: My two week staycation is over so I’m back at work and treating myself to a take-out lunch today. This week I bought some spinach rolls (like sausage rolls but stuffed with spinach) so I will have a caesar style salad taking inspiration from a recipe from my Sunset cookbook on salads. It calls for using cauliflower, broccoli, carrots, and zucchini and dressed with a ceasar salad dressing. Almost all of the veggies came in yesterday’s CSA except the carrots which were purchased at the grocery store as a missing ingredient for whatever I was making at the time.
Tomorrow: I haven’t quite decided yet on today’s activities although I am leaning towards clothes shopping. I will make dal for dinner so I can have leftovers since my next sketching class starts on Monday. I would like something I can heat up when I get home since it will be late.
Sunday: Gallery visit and lunch with Irena! Another salad for dinner.
Monday: I am starting another sketching class today so I will reheat some dal for dinner when I get home.
Tuesday: Asparagus and sundried tomato risotto.
Wednesday: Scallop edamame salad.
Thursday: Linguine al pesto, veggies tbd.

I was in a long term relationship with someone in the early 2000s and he loved all meat all the time. I like meat as much as the next person but sometimes I want a vegetarian meal. It didn’t matter how much persuading I tried, vegetarian food was a hard no for him. When we split up I ate vegetarian food for six months solid. Around this time I went for a staff lunch at a brasserie and decided I wanted a burger and fries. I’m not sure what I was thinking but I had such a stomach ache after…
It can be really tough when you switch back from being a vegetarian to being a meat eater, and there are only a few red meat things that I can handle (physically; mentally is a whole different issue). I stick can’t handle even the slightest bit of pork (lard, anything) without being sick for a full day. Weirdly, rare beef is much easier for me to handle than very cooked.
Also, I absolutely understand about news stories breaking your heart.
Hi everyone, hope you’re all well. As you have heard, there was heavy flooding here in Chapel Hill. The town got hit really hard. Most of my local friends were without power, and many (like us) had flooding in their homes. But right now the hardest part for me is that my local Trader Joe’s got hit badly, and is closed. Rumors are that they might reopen in a couple weeks. I’m realizing just how much I rely on the store. Lulu popped in for a couple days, but I drove her to the airport at 4:30 this morning so that she could go to California for a two week job teaching debate. So LLD and I are back to empty nesting. He’s promised me dinner out at the seafood place tonight. Woohoo! Here’s what we ate:
Mon: jumbo shrimp with mustard and garlic (Made in India, a COTM), rice, roasted green beans
Tues: caprese sandwiches
Wed: chicken and bok choy stir fry over rice. This was disappointingly bland. I’m still working on finding the perfect stir fry formula.
Thurs: Lulu home and craving pizza, so, carry out!
Fri: rigatoni with chicken sausage and broccoli. Sometimes the simplest meals taste perfect and this was one of those times.
Sat: dinner out
Sun: either carry out or LLD will cook.
I made an apricot ricotta cake to welcome Lulu back, and it is heavenly.
