Weekly Menu Planning - August 2025

Hi everyone

Realized that I forgot to post my thoughts for last week in a flurry of activity, so I’ll try to remember actuals instead.

– Masala cheese toast – love this easy dinner: minced red onion, green chilli, cilantro, and tomato mixed with grated Amul (or cheddar). This time we had them open-faced.
– Whole roast chicken – my mom used to make this in a big kadhai / wok stovetop, but I’ve been experimenting with the countertop oven. It doesn’t get screaming hot for the Keller recipe burnished outcome, but the skin was still crisp and the chicken was absolutely delicious. I think it was a 2-2.5 lb chicken, which are rare to find in NYC. Sides of rosemary potatoes and pan-roasted cauliflower that turned out very nicely. Porcini ravioli in a light bechamel for mom, with the vegetables on the side.
– Lacy pan-fried momos (dumplings) – these turned out very nice and crisp. Frozen momos, homemade sauce.
– Dal, rice, and “fish fry” – a comfort meal in our family. The fish was a treat: Ghol aka black spotted croaker, which is hard to get a hold of these days because it’s one of the top export fish to east and southeast Asia. I remember when my dad would bring it back from a weekend fish market shopping spree: it was the first thing he cooked, along with an “amuse bouche of fried prawns :joy: (dal & rice were kept ready). A lovely meal and a happy memory.
– Indian Chinese out with a new friend (rare these days!) – Schezwan chicken lollipops (wings), Gin chicken balls, Chilli beef, Pan-fried noodles with chicken and vegetables, Burnt garlic fried rice. A delicious meal and a fun evening.
– The Shortcut Chicken Verde discussed above, adding cilantro, onion, and garlic to a jar of salsa vetde— eaten with rice and steamed broccoli.

I know there was more, but that’s all I can remember!
