That butternut squash salad with farro and pepitas is one of my favorites (even made with buckwheat instead of farro). I add more sherry vinegar than she calls for, and occasionally some dried cranberries and/or arugula.

Lentil salad: what about the SK lentils with burrata and basil vinaigrette? I’d use tiny mozzarella balls instead of burrata for ease of potluck-ing.

Shamefully, I made the recipe in my original post that I had made before. My week got very hectic at the end and so I went with a recipe I knew and that is easy. I will be trying some of the suggestions in this post though! I am not vegetarian but I eat a good deal of vegetarian meals. Thank you all!
