my one criticism is that they kept the leaves in the teapot, so the tea became stronger as it sat - a pity for such good tea.

Yes, it annoys the carp out of us that many restaurants offer fine quality teas but never bother to teach the waitstaff how to make it properly!

Your opinion of La Balena/Monterey echoes ours. We have never bothered to return after one visit.
